Traditional Apple Pie with Honey: No added sugar

INGREDIENTS

For the crust:

2 1/2 cups all-purpose flour

1 tablespoon honey

1 teaspoon salt

225 g unsalted butter, chilled and cubed

1/4 to 1/2 cup ice water

For the filling:

6 cups thinly sliced and peeled apples (about 6-7 medium apples)

1/2 cup wildflower honey

1/4 cup all-purpose flour

2 tablespoons lemon juice

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1 tablespoon unsalted butter

Icing sugar or cinnamon for dusting (optional)

HOW TO MAKE APPLE PIE WITH HONEY

1. To make the crust, mix together the flour, honey, and salt in a large bowl.
2. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
3. Gradually add ice water, 1 tablespoon at a time, mixing until the dough comes together in a ball.
4. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
5. Preheat the oven to 190°C (375°F).
6. In a large bowl, mix together the sliced apples, honey, flour, lemon juice, cinnamon, nutmeg, and salt.
7. Roll out one disk of dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the dish and trim the edges.
8. Pour the apple filling into the pie crust and dot with butter.
9. Roll out the second disk of dough and cut into strips to create a lattice pattern on top of the pie. Alternatively, you can simply lay the dough over the filling and cut a few slits in the top to allow steam to escape.
10. Bake the pie for 45-50 minutes until the crust is golden brown and the filling is bubbling.
11. Let the pie cool completely before slicing and serving. Dust with icing sugar or cinnamon if using.
