Description

This raw Irish honey – wildflower is pure honey from our own honeybees. Our bees make wildflower honey from nectar from spring and summer flowering trees, shrubs, and wildflowers. Each batch tastes slightly different depending on what blossoms the bees have collected nectar from. Blackberry blossom, dandelion, white clover, linden blossom, thistle, and horse chestnut are the main sources of nectar for our honeybees that make Wildflower honey. Some years sycamore and hawthorn will yield a good crop and add depth and flavour to the blend.

Taste and aroma

At Hanna’s Bees, we produce small batches of exquisite honey. Our wildflower honey is golden in colour and has a rounded floral taste and aroma. Because of its flavour and soft runny consistency it pairs wonderfully with porridge or yoghurt and fruit for a healthy breakfast. It is also delicious on its own, in tea or coffee or drizzled over pancakes or fresh fruit. Our Raw Irish Honey – Wildflower is our most popular honey because it is so flavoursome and versatile. 

Crystallisation and storage

Pure raw Irish honey will crystallise naturally. How quickly the honey crystallises depends on the types of flowers the honey originated from as well as how the honey is stored. You can eat crystallised honey as it is. It does not need to be liquid to consume. However, if you prefer clear honey, stand the jar of cloudy or crystallised honey in a bowl of hot water and stir until clear. Make sure not to overheat the honey, as it will destroy some of the enzymes that are so beneficial in raw honey.

Store at room temperature. You can also freeze raw honey. Freezing honey delays crystallisation, and it can then be defrosted when needed.

Do not give raw honey to infants under 12 months.
