Raw Irish Soft Set Honey

This raw Irish Soft Set Honey is pure honey from our own honeybees. Our soft set honey is made from spring rapeseed honey, mixed with spring and summer wildflower honey for a rounded flavour and a creamy melt-in-your-mouth texture. Our bees make spring and summer honey from nectar from flowering trees, shrubs, and wildflowers. Each batch tastes slightly different depending on what blossoms the bees have collected nectar from. Blackberry blossom, dandelion, white clover, linden blossom, thistle, and horse chestnut are the main sources of nectar for our honeybees that make our honey. Some years sycamore and hawthorn will yield a good crop and add depth and flavour to the blend.

Taste and aroma

At Hanna’s Bees, we produce small batches of exquisite honey. Our raw Irish soft set honey gets its smooth texture from the minute crystals that form as the honey sets. It is light in colour and thick and spreadable. It has a rounded, mellow flavour, with floral and toffee undertones. Soft set honey is best eaten as it is, on toast or homemade bread, a dollop added to hot porridge and allowed to melt slightly, or just a spoonful straight from the jar. It is also a wonderful accompaniment to a cheeseboard with chunks of cheese and biscuits. Soft set honey is ideal honey for children as it does not drip!

Storage

Kept at room temperature, our soft set honey is spreadable, and if kept in the fridge it may harden to a chewy, toffee like consistency depending on the blend.

Make sure not to overheat the honey, as it will destroy some of the enzymes that are so beneficial in raw honey.

Store at room temperature or freeze.

Do not give raw honey to infants under 12 months.
