Scandinavian Rhubarb Pudding with Honey

It’s rhubarb season again and it’s time to indulge! If you love rhubarb, you’ll love this Scandinavian Rhubarb Pudding! It’s a unique rhubarb recipe where the tartness of rhubarb meets a delicious sugary crust.

Scandinavian Rhubarb Pudding
INGREDIENTS

For the Pudding

  • 600g Rhubarb, sliced
  • 220g Flour
  • 50g Sugar
  • 50g Almond flour
  • 100ml Honey
  • 150ml Milk
  • 100g Butter, melted
  • 2 Teaspoons Baking powder
  • 1/2 Teaspoon Salt
  • 2 Teaspoons Vanilla Sugar or 5 drops of vanilla essence (optional)

For the Topping

  • 150g Sugar
  • 1 Tablespoon Cornflour or Potatoflour
  • 200ml Water, boiling

To Serve

  • Whipped Cream, ice cream or homemade custard
  • Almond flakes, toasted
HOW TO MAKE SCANDINAVIAN RHUBARB PUDDING

Use a medium oven dish, approximately 25cm diameter. Grease the bottom and sides with butter.

In a bowl, mix flour, milk, almond flour, sugar, honey, melted butter, baking powder, salt and vanilla powder/essence if using. Place sliced rhubarb at the bottom of the oven dish and pour in the mixture on top. Spread it out evenly. Mix the sugar and cornflour and sprinkle on top. Pour the boiling water on top of the sugar mixture.

Place in the middle of the oven at 180 degrees Celsius and bake for 55-65 minutes.

Enjoy warm with whipped cream, vanilla ice cream or custard and toasted almond flakes. For a real homemade treat, why not try with our homemade Honey Ice cream.

Wildflower honey is easiest to use for this recipe, but other honeys can be used also. If the honey has crystallised, you may need to heat it a bit to get it runny so that it can mix well with the other ingredients. Try our Raw Irish wildflower honey for this delicious recipe.
