Soft set honey

Our soft set honey is made from spring rapeseed honey, mixed with spring and summer wildflower honey for a rounded flavour and a creamy melt-in-your-mouth texture. Our bees make spring and summer honey from nectar from flowering trees, shrubs, and wildflowers. Each batch tastes slightly different depending on what blossoms the bees have collected nectar from.

Our raw Irish soft set honey gets its smooth texture from the minute crystals that form as the honey sets. Furthermore, it is light in colour and thick and spreadable. It has a rounded, mellow flavour, with floral and toffee undertones. Soft set honey is best eaten as it is, on toast or homemade bread, a dollop added to hot porridge and allowed to melt slightly, or just a spoonful straight from the jar. It is also a wonderful accompaniment to a cheeseboard with chunks of cheese and biscuits. Soft set honey is ideal honey for children as it does not drip!

Heather Honey

Irish Heather Honey, produced in the Comeragh Mountains, Co. Waterford. Our heather honey is dark in colour and has a powerful taste and aroma. Our bees make it from nectar from ling heather, Calluna vulgaris. During the end of summer, we move a select few colonies up to the mountains to forage on the ling blossoms and produce this most sought after honey. Heather honey is jelly-like in consistency and also has tiny air bubbles in it. Because it has a strong woody and floral taste it is delicious with a chunk of cheese and biscuits or with yoghurt and fruit. It is also delicious on its own on toast or homemade bread, a dollop added to hot porridge and allowed to melt slightly, or just a spoonful straight from the jar. A spoonful of raw heather honey is also a great tonic for sore and itchy throats.

Wildflower Honey

Our bees make wildflower honey from nectar from spring and summer flowering trees, shrubs, and wildflowers. For instance, blackberry blossom, dandelion, white clover, linden blossom, thistle, and horse chestnut are the main sources of nectar for the honeybees that make Wildflower honey. Some years sycamore and hawthorn will yield a good crop and add depth and flavour to the blend. As a result, each batch tastes slightly different depending on what blossoms the bees have collected nectar from.

Our wildflower honey is golden in colour and has a rounded floral taste and aroma. Because of its flavour and soft runny consistency it pairs wonderfully with porridge or yoghurt and fruit for a healthy breakfast. It is also delicious on its own, in tea or coffee or drizzled over pancakes or fresh fruit. Our raw Irish Wildflower honey is our most popular honey because it is so flavoursome and versatile. 

All our honey is pure raw Irish honey from our own honeybees.

Storage

Make sure not to overheat the honey, as it will destroy some of the enzymes that are so beneficial in raw honey.

Store our Pure Irish Honey Collection at room temperature or freeze.

Do not give raw honey to infants under 12 months.
