INGREDIENTS

  • 2 eggs
  • 150 g honey
  • 3-4 fresh peaches
  • 400ml cream
  • Pinch of salt
  • Squeeze of lemon juice (optional)

HOW TO MAKE PEACH & HONEY ICE CREAM

  1. Combine Eggs and Honey: In a large bowl, whisk together the eggs and honey until the mixture is smooth and well combined.
  2. Prepare the Peaches: Puree the peaches in a blender or food processor until smooth. Measure out 5 cups of the peach puree and stir it into the egg mixture.
  3. Mix Ingredients: Add the cream, a pinch of salt, and the lemon juice (if using) to the bowl. Mix everything well to ensure a homogenous blend.

    • With an Ice Cream Maker: Follow the manufacturer’s instructions for your ice cream maker to churn the chilled mixture. This typically involves pouring the mixture into the machine and churning until it reaches a soft-serve consistency.
    • Without an Ice Cream Maker: Pour the chilled mixture into a shallow container. Place it in the freezer, and every 30 minutes, remove it and whisk vigorously to break up any ice crystals. Repeat this process until the ice cream is fully frozen and smooth.
  6. Freeze and Serve: Once churned, transfer the ice cream to a lidded container and freeze until firm, typically 4-6 hours. Scoop and serve this delightful treat as a refreshing dessert.

  • Peach Selection: Choose ripe, fragrant peaches for the best flavour. Do not substitute for frozen peaches. No peaches? Make our Honey Ice Cream instead!
  • Honey Variety: Experiment with different types of honey. Mild flavoured honeys such as wildflower, summer, fuchsia or borage honeys are best to start with for this recipe as otherwise it can overpower the flavour of the peaches.
  • Consistency: Ensure the mixture is thoroughly chilled before churning to achieve the creamiest texture possible.
