Nutty Honey Roasted Granola

Homemade nutty honey roasted granola is an excellent way to use up leftover seeds, nuts and dried fruits after Christmas, or after a cupboard clear-out. In our house, we love a really nutty muesli, so we pack ours full of nuts and seeds and add a few spoonfuls of cinnamon to intensify the flavour. A mixture of a few different nuts and seeds works best so try to aim for at least four different seeds and nuts. There is no added sugar in this recipe, all sweetness comes from the natural sugars in the honey, dried fruits and raisins.  I find this recipe particularly great for getting rid of the last few spoons of honey in the bottom of the jars, or honey that has started to granulate. Our latest batch was made with Ivy honey, and it was simply heavenly.

Ingredients

1 litre oat flakes/porridge oats (or 700ml oat flakes and 300ml barley flakes)

0,5 – 1 litre seeds and chopped nuts, mixed (Sunflower seeds, Pumpkin seeds, Desiccated coconut, Sesame seeds, Flax seeds, Hazel nuts, Almonds, Pecan nuts, Cashew nuts and/or Walnuts)

100-200 ml raisins

100 ml dried fruit and berries (optional), cut into pieces. (Prunes, dried apples, goji berries, apricots, figs, dates, dried bananas etc.) 

50 ml rapeseed or coconut oil

150 ml honey (approximately one ½ lb jar of honey)

1-2 tsp ground cinnamon

Instructions

Preheat the oven to 160-170 degrees Celsius

In a large pot, heat the oil and honey on medium heat until melted.

Stir in the Cinnamon then add the oat flakes and stir until evenly coated.

Add seeds and chopped nuts and mix well.

Spread out the mixture in a large oven dish and place in the middle of the oven.

Check and stir after 5-8 minutes, then repeat every five minutes until the oats and nuts are roasted and have a golden look. This should take between 15-25 minutes. Make sure not to burn the mixture.

Remove from the oven and stir in the raisings and fruit pieces. (Do not be tempted to add the raisins and fruit during cooking as they will burn.)

Let cool and store in an airtight container.

Serve with milk or yoghurt and fresh fruit.
