This warming and wholesome Noodle Soup Recipe with Jew’s ears mushrooms and foraged spring greens is a perfect celebration of the transition of winter into spring. INGREDIENTS
1 litre of chicken or vegetable stock
A handful of seasonal greens like tender nettle tops, three cornered leek or ramsons (you can also add spinach, kale, chard or sea spinach)
A handful of Jew’s Ears mushrooms, cleaned and sliced
200g of rice noodles/vermicelli or cooked wheat noodles
1-2 teaspoons of chili flakes (adjust to taste)
2 tablespoons of soy sauce
1 tablespoon of apple cider vinegar
1 teaspoon of sugar
1 tablespoon of grated ginger and/or garlic (omit if using ramsons and/or planning a hot date)
1 poached egg per serving
Chopped chives, Chinese chives, spring onions and/or coriander for serving.
Homemade kimchi for serving
HOW TO MAKE NOODLE SOUP
Bring the stock to a boil in a large pot.
Add the Jew’s Ears mushrooms and let them simmer for about 10 minutes.
Add the noodles to the pot and heat through.
Stir in the chili flakes, soy sauce, apple cider vinegar, and sugar.
Add the grated ginger and/or garlic, if using.
Just before serving, stir in the seasonal greens and let them wilt in the hot soup.
Serve the soup hot, topped with a poached egg and chopped chives and coriander if using. Top with homemade kimchi.
Variations
This noodle soup recipe is incredibly versatile and can be adapted to suit your tastes or what you have on hand. Here are a few suggestions:
Greens: Feel free to substitute the greens with whatever is in season. Spinach, kale, chard, or sea spinach would all work well.
