Courgette Salad with Honey & Dijon Dressing

This courgette ribbon salad with Honey and Dijon dressing is a healthy and refreshing side dish that’s perfect for any occasion. The sweet and tangy dressing complements the mild flavor of the courgettes, while the cherry tomatoes, red onions and feta cheese add a pop of color and texture. Enjoy!

Courgette salad with honey and dijon dressing

INGREDIENTS

For the salad

  • 2 medium sized courgettes (zucchini), ends trimmed
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 1/2 Red onion, thinly sliced
  • 1/4 cup walnuts, chopped and toasted (optional)
  • Herbs and lettuce (optional)
  • Salt and pepper to taste

For the dressing

  • 2 table spoons extra virgin olive oil
  • 1 table spoon apple cider vinegar
  • 1 table spoon honey
  • 1 table spoon Dijon mustard
  • 1 garlic clove, minced
  • Salt and pepper to taste

HOW TO MAKE THE COURGETTE SALAD

  1. Use a vegetable peeler or a mandoline to slice the courgettes into thin, long ribbons.
  2. Place the ribbons in a large bowl.
  3. Then add the cherry tomatoes, finely sliced red onions and crumbled feta cheese to the bowl.
  4. Also add chopped walnuts, herbs or lettuce if using.
  5. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, minced garlic, salt, and pepper until well mixed.
  6. When mixed, pour the dressing over the salad and toss gently to coat the ingredients evenly.
  7. When ready, serve the courgette ribbon salad with honey and dijon dressing immediately, garnished with more chopped walnuts or feta cheese, if desired.

Wildflower honey is easiest to use for this recipe, but other honeys can be used also. If the honey has crystallised, you may need to heat it a bit to get it runny so that it can mix well with the other ingredients. Try our Raw Irish wildflower honey for this delicious recipe.

Here, courgettes became popular in Italy and were later introduced to other parts of the world, including North America. Today, they are widely grown and enjoyed all over the world, and are an important ingredient in many cuisines.
