Courgette, Honey & Rye Bread

INGREDIENTS

For the Filling

• 6 medium-sized apples, peeled, cored, and sliced
• 3 tablespoons Wildflower honey
• 1 tablespoon lemon juice
• 1 teaspoon ground cinnamon
• 1/4 teaspoon ground nutmeg

For the Crumble Topping

• 120g all-purpose flour
• 60g rolled oats
• 60g brown sugar
• 60g unsalted butter, cold and cubed
• 3 tablespoons honey
• 1 teaspoon ground cinnamon
• 1 pinch salt

TO SERVE

• Homemade Honey Ice Cream or Vanilla ice cream
• Whipped cream
• Natural yoghurt

HOW TO MAKE HONEY APPLE CRUMBLE

1. Preheat the oven to 190°C (375°F).
2. In a large bowl, combine the sliced apples, honey, lemon juice, cinnamon, and nutmeg. Stir until the apples are coated evenly.
3. Pour the apple mixture into a 20-25cm (8-10 inch) baking dish.
4. In another large bowl, combine the flour, rolled oats, brown sugar, cinnamon, and salt.
5. Add the cold, cubed butter to the bowl and use your fingers to mix the ingredients together until the mixture resembles coarse crumbs.
6. Add the honey to the bowl and stir until the crumble topping is evenly coated.
7. Sprinkle the crumble topping evenly over the apple mixture.
8. Bake the honey apple crumble in the preheated oven for 40-45 minutes, or until the top is golden brown and the apples are tender.
9. Remove the honey apple crumble from the oven and let it cool for a few minutes before serving.

TIP 1

Rye flour is a great source of fibre and vitamin B. Rye flour also adds a darker colour and a deeper, more earthy, flavour when you add it when making wheat bread. You will find Rye flour in your health food store, many eastern European shops and also sometimes in supermarkets.

TIP 2

You can grate and freeze courgette for this recipe. This is ideal if you have a glut of courgettes in the summer. There’s no need to squeeze the water out of them before freezing. Just grate into a takeaway container and you have the perfect portion size for the Courgette, honey and rye bread.

TIP 3

This recipe works well with lots of members of the cucumber family, including zucchini, squash, cucumber and pumpkin. Just make sure to adjust the water or flour depending on how wet the grated fruit is. That is, add less water to cucumber bread, and more water to pumpkin bread.
